Jammie Dodger Cookie Cutter

While having a go at making jam with grapes from the garden I made it too thick. As such it wasn't really possible to spread it on bread, but it is really great for Jammie Dodgers! These are the cutters I designed to make my dodgers. Here is the recipe for the shortbread I used with these cutters:175g Butter 75g Caster Sugar 250g Plain FlourCream the butter with the caster sugar, then follow with the plain flour. Work together into a ball, wrap dough in food wrap and place in fridge for 30 mins or freezer for 10-15.Flour your work surface and then take out dough and roll to approx 5-6mm thick. Dip the end of each cutter in flour before cutting out the shapes, make sure you have the same number of tops and bottoms! The tops will need to have the middle bit removed before placing them onto a baking sheet and into the oven at 150C for 25 minutes.Once cooked take out the oven and transfer to a cooling rack. Allow to cool. When they are cold take the bottom piece and turn it so the flat side is facing up and put some jam on it, spreading it out. Then place a top piece on the jam. If you have jam (like me) that is too firm then heat it briefly in a microwave to soften it before putting on biscuit. Shop brought will work just as well :)
